Cuisine aqua provides a dual concept menu offering the best of both Italian and Japanese cuisines in one signature menu. The cuisines can be enjoyed on their own or combined, with say a Japanese starter and Italian main course.

 

Italian – aqua roma

aqua roma’s new chef, Giuliano Dacasto focuses on traditional Italian cooking with a modern flair.

Choose from a tempting selection of Primi, including fine antipasti, gourmet thin-crust pizzas,

hand-made pastas and al dente risottos. Move on to Secondi - a sumptuous array of

fresh seafood and some of the finest meat cuts available, all prepared to traditional

Italian values with a contemporary twist.

 

 

Japanese - aqua tokyo

aqua tokyo is “inventive traditional cuisine” taking authentic Japanese culinary roots to

“new heights”. Chef Iwahashi Tatsuya presents a mouth-watering array of sushi and

sashimi prepared from seafood he’s carefully selected and flown in daily from around the globe. 

 

To complete a wonderful dining experience, aqua’s famous Dessert Platter combines

a selection of Italian and Japanese desserts presented on a beautiful platter for sharing

by the whole table – Asian style.

Design: Emerging from a recent ‘makeover’ by David Collins Studio, aqua is looking more glamorous and stylish than ever.

 

As you step out of the elevator that has whisked you to the 29th floor, you are welcomed to the tranquil warmth of the interior lobby cascading with aqua’s ‘ankh’, the ancient Egyptian symbol for life. Doors glide open to reveal dazzling harbour and city views and the pumping vibe of aqua. Two-storey floor-to-ceiling glass windows frame the 360 views of Hong Kong. Marine blue hues surround in the texture of the natural wood floor and plush ‘embossed’ leather seating (‘can’t keep your hands off it’) offset with warm yellows and antique brass tones. Fresnel glass lamps and bespoke chandeliers cast their discrete lights to the centre of two-tone blue lacquered tabletops. Guests are offered intimate booth tables or seating on the glamorous catwalk - clever tiering ensures that every table and diner have uninterrupted harbour views.

 

Overlooking the restaurant is Hong Kong’s ‘ultimate’ chill zone – aqua spirit. This panoramic mezzanine lounge bar is also decked out in marine blues and warm antique brass tones. Centre-stage is the glamorous bar, home to aqua’s cool cocktails and sporting two large beautiful bespoke classical lamps.

 

Aqua’s ‘makeover’ is the result of a collaboration between founder David Yeo

and interior designer David Collins Studio.

Perched in the penthouse of One Peking, aqua spirit is Hong Kong’s most glamorous nightspots. This stunning and atmospheric bar offers ultra-stylish

interiors with unparalleled 360 degree views of Hong Kong’s stunning skyline and harbour as a backdrop. Aqua’s mixologists create innovative signature cocktails,

from classic favourites to the boldly avant-garde, while after-dinner beats are mixed by Aquamusic, aqua’s own team of internationally acclaimed resident DJs.

Crispy suckling pig served on celeriac puree with caramelized apple, turnip and shallots in a pork & red vermouth jus

 

Semifreddo di mele Verdi al Calvados con spumoso di castagne e salsa di mirtilli

Apple and Calvados parfait with a light chestnut mousse and blueberry coulis

2. Mizuna, pot herb and mustard leaf salad with grilled bean curd skin and crispy bacon drizzled with a mirin, sake, soy, sesame oil and chili dressing

3. Lobster with french bean, sweet potato and shiitake mushroom yasai kakiage tempura topped with pan seared teriyaki foie gras

4. Baked black cod and Taraba crab with burdock and crab sauce

5. Stone grilled Wagyu beef sirloin and crispy garlic chips with three sauces Onion and garlic - Sour soy sauce – Sansho pepper soy
