Sweet, Sweet Sugar

 

ALL raw sugar is slightly brown when extracted from the sugar cane due to the presence of molasses;

 

Regular White or Brown – (Refined sugar) White sugar has all the molasses removed and brown sugar is regular white sugar with a little molasses added back. Brown sugar has a slightly richer taste than white sugar.  All purpose use.

 

 

 

 

The “Raw Sugars”

TurbinadoRelatively unprocessed , unrefined and is crystallized through evaporation. Made from the first pressing of sugar cane and retains some natural molasses. The crystals tend to be large with an off-white colour. It has a light caramel flavor that makes it a good replacement for regular white sugar.

 

DemeraraUnrefined and with very large crystals. Similar to Turbinado with large, irregular grains and a light brown color.  The sugar still has lots of natural molasses , giving it a ‘toffee’ flavour .A popular sweetener for teas and as a replacement for brown sugar. It works in most recipes that call for plain sugar, although the resulting cookies will sometimes have a slightly crunchier texture and cakes may have a less-fine crumb.

 

Muscovado - Unrefined with a dark brown colour. Flavored from sugarcane juice left in during the production process. Has a sticky, moist texture and strong molasses flavour. Can be used just like brown sugar. Excellent in savory dishes like barbecue sauces and marinades.

We’ve all listened to Celebrity Chefs going into rapture about Muscovado or Demeraro, but why the fuss?
 
Well, firstly, I must say that ALL types of sugar are not good for you, ‘empty calories’ etc.  BUT, if you’re going to use it, then the depth of flavour and divine aromas of these less refined sugars make regular sugar pale in comparison. More expensive and usually classified as ‘Specialty Sugars”, they definitely add a different dimension to your cooking and baking and offer a greater health benefit.
